There is no problem with carbs from natural sources, fruit sugar from whole fruits, or starch from whole grains and legumes.
The problem is in most processed junk food (HIGH FAT!) say potato chips, in addition to the natural starch, refined sugar, salt and oil and many chemical flavoring agents are added to make it more addictive. They even advertise for being addictive "I bet you cannot eat only one"...

Real test of insulin resistance is not low fasting sugar levels, and not even getting off insulin injections, but what's called insulin response test, where the patient is given sugary water or soda to drink, and both blood sugar and insuline levels in the blood are tested in 30 min, 1 hour, 2 hours, and 3 hours later.
